First, we have Ben of What's cooking? making Eggplant and Chicken Casserole. This is his adaption of an Easy Eggplant Bake from Tasty Palettes. His twists were to use Mexican double cream cheese (queso doble crema), add chicken and use red wine with the tomato sauce. He was lucky enough to come across the queso doble crema in Ohio, which was a real find. The dish looks like a delicious pasta-free lasagna alternative.
Next is a recipe for Sea Urchin Risotto from Laurie of Mediterranean Cooking in Alaska. The original recipe is from the book Varoulko Colors, Smells and Tastes (Βαρούλκο Χρώματα, Αρώματα και Γέυσεις ) by Lefteris Lazarou with Diane Kochilas (Λευτέρης Λαζάρου με Νταϊάνα Κόχυλα). The recipe is a straightforward and focuses on highlighting great quality ingredients. Sea urchins are in season now in Greece, if only I could be there!

The intrepid founder of Bookmarked Recipes Ruth from Ruth's Kitchen Experiments made Soy Honey Cocktail Sausages from Nigella Express. She had to make these more than once they're so irresistible. Be sure to note her dog Stewie looming over them in the background.
Finally here I am, Maggie of Dog Hill Kitchen. My Beer Bread Experiments and some Bean Salad is a double whammy of bookmarked recipes. The Beer Bread recipe is from Zesty Cook and the Bean Salad is my interpretation of the Mock Tuna Salad from The Daily Spud.
